  2. In a skillet, heat 2 tablespoons of olive oil over medium heat.
  3. Sauté 1 finely chopped onion and 2 minced garlic cloves for 2 minutes.
  4. Add 1/2 red and 1/2 yellow bell pepper (diced) and cook for 3 minutes.
  5. Stir in the rice, 1 teaspoon oregano, 1/2 teaspoon cumin, salt, and pepper.

  7. Add 2 cups vegetable broth. Bring to a boil, then cover and reduce heat.
